Wine makers call Cabernet Sauvignon the king of grapes. It is Washington’s most popular and most pricy wine. The grape has qualities of bush berries, currents, plums, and cherries. Cabernet can create wines that can be a tad harsh with acids and tannins. With a little touch of oak and blended with a sweet grape, Cabernet can sing you love songs. It has made Napa famous and Washington is well on its way to proving globally that it can also create unique and amazing Cabernet Sauvignon. We offer a jaunt through eastern Washington to show off the King… Cabernet Sauvignon.

Bonaire, Cabernet Sauvignon, Yakima Valley $16
Here is a ripe, full flavored cabernet. The blend includes 10% Merlot and 15% Cabernet Franc. Surely a great strength of well sited Yakima Valley fruit is the ability to obtain ripe, mixed fruit flavors with nothing weedy or vegetal, yet nothing syrupy, jammy or overblown. Here's the proof: pure varietal flavors of blackberry and cassis, just lightly kissed with oak.
Hedges, Cabernet Sauvignon CMS, Columbia Valley $17
Gorgeous dark crimson color. A little bit of fig, black pepper, and cinnamon. The wine shines through on the palate adding a lot of structure, backbone and dark flavors. The Syrah and Merlot balances well whilst adding a fruity and softening effect on the tannins.
Soos Creek, Cabernet Sauvignon-King Cab, Horse Heaven Hills $19
This is the first vintage of “The King” from Soos creek. An entry level Cab is sourced from Horse Heaven Hills, the appellation known for producing Washington’s best Cabernet. The wine offers concentrated blackberry, cherry and subtle spice flavors ending with a long, soft finish. Bottled in Kent WA!
Pamplin Family JRG Red Wine $29
Like a gold-plated pistol, this wine is extravagant and expressive. Layered with black cherry, orange zest. Wine has polished tannins. One third of the wine is aged 21 months in NEW oak. The Cabernet Sauvignon has tremendous focus, energy and length. Cabernet Sauvignon (86%) makes up most of this wine, with the balance Merlot. Aromas of spice, graphite and cherry are followed by initially subdued fruit and barrel flavors.
Mathews, Cabernet Sauvignon, Columbia Valley $33
Ripe plums and black currants set against a background of wild berries and intermingled with dark spices and dark chocolate. A rich, brooding wine. The palate is dense, round and polished. Classy, with a beautiful finish, this wine offers an abundance of power.
