Many wineries in Chile were founded by French winemakers who arrived when phylloxera devastated European vineyards. The best producers combine old-vine traditions with modern winemaking expertise to create unique blends that capture the essence of Chile’s terroir.

J. Bouchon, Canto Sur Red                Maule Valley, Chile       $18
In 1892, Emile Bouchon, a native of Bordeaux, arrived in Chile and settled in the Maule Valley, south of Santiago. Now owned by Bordeaux-trained enologist and fourth-generation family member Julio Bouchon, the vineyards boast 60-year-old vines. Aromas and flavors include Mediterranean herbs, plums, sour cherry, blackberry, wild cherry, black pepper, and dried bay leaf, with lively acidity and a smooth, juicy palate. This vibrant blend contains 50% Carmenere, 25% Carignan, and 25% Pais.

Bodegas Volcanes, Tectónia GPSM        Central Valleys, Chile  $21
Bodegas Volcanes specializes in wines expressing Chile’s volcanic soils, blending classic Mediterranean varietals for depth and character unique to the region. Expect aromas of wild flowers, oregano, cinnamon, and fresh red and black fruits like black cherry, raspberry, and strawberry. Notes of smoke, tobacco, and minerals add complexity. This wine features rich, velvety tannins and a dense, elegant finish. Blend: Grenache, Petite Sirah, and Mourvedre blended from Chile's Central Valleys, specifically the Rapel, Maipo, and Maule valleys.

Lapostolle, Grand Select Cabernet Sauvignon      Colchagua Valley, Chile  $22
Founded in 1994 by Alexandra Marnier Lapostolle and Cyril de Bournet (family renowned for Grand Marnier liqueur), Lapostolle focuses on expressing Chilean terroir through French techniques, pioneering the Apalta Valley's global reputation. Ruby red with cherry edges, it showcases fresh red fruit aromas like strawberry and plum, complemented by spicy cardamom and red paprika notes. Medium acidity and juicy tannins lead to a plum aftertaste. 100% Cabernet Sauvignon aged 12 months in French oak.

Lapostolle, “Cuvee Alexandre” Carmenere           Colchagua Valley, Chile   $31
Originally a Bordeaux grape, Carmenere was brought to Chile by French wine pioneers around the turn of the last century. It has become the country's signature grape, mistakenly thought to be Merlot until 1994 DNA testing confirmed its identity. All fruit comes from Apalta estate vineyards in the Colchagua Valley. Deep purple red with expressive black fruits such as maqui, ripe plums, and blackberry, along with spice notes of paprika, tobacco, and herbs. Medium structure, juicy tannins, well-balanced with layers of red fruit. Blend: 85% Carmenere, 15% Cabernet Sauvignon.

Time: 2pm - 8pm or until the bottles run dry!
