Classically trained in Santa Fe, NM, Chef Zach (formerly of Nicks on Madison, and owner Chambers Bay Wine Dist.) and his team of cherubs will create a tasting menu that will woo your taste buds. Each course will be paired with a wine that enhances the blend and excites the heart and mind.

Seared Foie Gras - toasted brioche toast, blackberry port wine fluid gel, fresh thyme, whole berries

Apple Radicchio Salad - Local WA gala apples, frisee, Radicchio, Manchego cheese, Pickled shallots, pancetta lardon, pink peppercorn, apple thyme vinaigrette

Tagliatelle & Truffles - Handmade tagliatelle, Shaved local NW black truffles, garlic, thyme, parmesan reggiano, olive oil, fresh black pepper

Rabbit Three-Ways - Rabbit Roulade with mushrooms, thyme, shallot , garlic, camembert cheese, Prosciutto wrapped and seared Rabbit Loin, Rabbit Rib Rack confit, sauteed morel mushrooms, fava beans, garlic, shallot, pickled pearl onions, fresh pea vines, thyme rabbit demi, and parsnip puree.

Ice Cream Flight - Homemade Blackberry, Apple, Cherry Ice Creams, with mint syrup and a fresh shortbread cookie
